Wellness Weekend, January 12-16, 2012

Hi Everyone! So, how are those resolutions coming along? ;)

I decided a long time ago that I was no longer going to write out New Year’s resolutions, only to break them a week or two into the new year.  This year, I’ve been happily following a whole foods detox diet (today is Day 4 of 16) and can honestly say I’m loving everything I’ve eaten–and haven’t had any negative reactions. Whole, real food tastes great, and it’s what I normally eat anyway!  And that’s what I love about these Wellness Weekends as well–any one of your marvelous dishes from last week’s event could be enjoyed by someone on a whole foods diet. So forget the resolutions and find some food inspiration here!

Here are my picks from last week on the theme of “New”:

  • Fennel, Orange and Sesame Salad from Gluten-Free Cat. It was only last year that I first tried fennel, and now I’m hooked. This salad features raw fennel, the way I love it.  It’s worth trying if you haven’t yet!
  • Chocolate Lovers’ Kale from Cats in the Kitchen.  Well, I’ve had kale chips (love ‘em) and I’ve had chocolate (but of course), but chocolate-covered kale chips?  Given that the chips themselves seem to have very little flavor of their own, I can only imagine these will satisfy a craving very well!
  • Chickpea Piccata from The Taste Space. I never did try chicken piccata back in the day, so this chickpea version sounds like a great new dish for me to try!

Readers’ Choice, Savory: Basic Lentils and Quinoa from Wheat Free, Meat Free. A perfect pairing of two staples in almost every gluten-free pantry.  The sum is, clearly, much greater than the parts here! Yum.

Readers’ Choice, Sweet: Pumpkin Spice Cheesecake Swirl Brownies from Cara’s Cravings.  A unique combination of pumpkin pie cheesecake and brownie base makes for one very decadent-looking treat.  What more would you need to know?

What your recipe CAN contain:

  • Any good-for-you, whole foods, especially those with antioxidant properties or “functional foods” (ie, offering naturally medicinal or health-promoting qualities–such as garlic, coconut oil, all vegetables, fruits, herbs, etc.)–but any fresh, real food is welcome!
  • Natural sweeteners (coconut sugar, agave, brown rice syrup, maple syrup, stevia, Sucanat, rapadura, coconut nectar, yacon syrup, etc.)
  • Vegan ingredients (even if you’re not vegan, OF COURSE you can still play along! You’ll be surprised at how many foods are naturally vegan; and if not, there are many subs you can use for eggs, milk or butter–include vegan options and we’re good to go!).
  • Note that this is NOT AN ACD-ONLY EVENT. Any real food ingredients that are sugar-free and vegan are more than welcome–so use that maple syrup, those mushrooms, that nutritional yeast, miso, etc! I’m just looking for healthy, whole foods recipes. :)

What your recipe cannot contain:

  • White flour, white sugar, or any highly refined, highly processed ingredients (note that regular brown sugar is actually refined!);
  • Anything almost entirely artificial (ie, most boxed mixes, fast food, faux “cheese,” faux “meat,” or margarine, unnaturally colored cereals or other foods, etc.);
  • Animal products (meat, chicken, fish or seafood, or their by-products, gelatin, eggs, dairy, butter or honey).

Hey! Why was my entry removed?”

  • The most common reason entries are removed is because they don’t adhere to the guidelines: either they don’t contain a link back to this post, they contain ingredients that aren’t listed here, they are a re-post of a blog entry that is more than one week old, they link to another blog event, or they contain neither a recipe nor anything directly related to food preparation. If you render a recipe vegan-friendly by adding a vegan option to your ingredients, your post will be good to go! For older posts, you’re welcome to re-post them during the week of the event, or choose a newer recipe.
  • Another reason posts are removed is because the link leads to an advertisement or a business blog. Please do NOT link up posts that are merely referrals to a different post or the home page for another blog event.
  • Only one thumbnail per post, please. If your post contains two suitable recipes, link up once and people will still see all your fabulous recipes when they click on the linky. :)

  3. Hi Ricki, I just posted a ridiculously easy treat..vegan, gluten free, paleo friendly, and raw! I didn’t strive for that…but there it is! On a side note, I just finished my recipe index…I didn’t realize so many of my recipes were vegan! When you put it all in one place…it becomes more obvious I guess.

    I always look forward to your wellness weekend! The recipes are always very inspiring.

    This week I submitted a recipe for a vegetable stock, made from the leftover vegetable pulp from juicing. I made a huge batch of green juice this week and saved the kale, carrot, cucumber and spinach pulp and used it to make one of the most delicious vegetable stocks – full of rich kale and carrot flavor. In an effort to reduce waste in my kitchen I make my own stocks and I like experimenting with different ingredients, this one is just fantastic!
