Salads really are the ideal summer food, aren’t they? They’re bright and rainbow-colored, just like all the blooming vegetation surrounding us right now. They’re light and crisp and juicy–perfect characteristics for food when you want to un outside after dinner to go for a bike ride, or take a swim, or throw the Frisbee for the dogs without feeling weighted down. Plus, most salads don’t require cooking–so no heat added to the already-sweltering weather (okay, I’m being hopeful here–Toronto’s summer so far totally belies that last statement.).
With Father’s Day right around the corner, I thought you might like to try something new in the salad arena.Β Since I’ve been incorporating more raw foods into my diet, I’m always on the lookout for more salad recipes. So, whether you fancy fresh, crisp veggies, fruity salads, grain-based or remakes of omnivore classics, with more than 100 salads listed here, you’re bound to find at least one or two you’ll enjoy!

I just had a “eureka” the other day and thought I would share it on this wonderful salad post. Pesto. Yes – more specifically what to replace the traditional parmesan cheese with! I looked at many recipes, and have seen the nutritional yeast, the extra nuts, etc etc, but somehow, its just not the same. Then I remembered this pesto stuffed mushroom recipe from “forks over knives” and decided to use their substitution – enter white MISO! for my garlic scape pesto. Its TO DIE FOR! raw garlic scapes, sunflower seeds, lemon juice, white miso and olive oil all pureed together and slapped onto a piece of toasted gluten free bread made me soak in memories of yummy saturated-fat laden restaurant garlic bread! Anyway, Im not sure whether Miso is Candida-safe, but since its shock full of nutrients and gluten-free (the one i use is solely made of rice) I thought I would let you and your readers in my new pesto secret!
