Grain-free Ginger Blondies

Do you remember what you were doing on April 22, 1970?

I know, some of you weren’t even born back then. Although I was definitely alive at the time, I was still a pre-teen who likely spent the day at school, watching soap operas on TV in the afternoon, and then bicycling to the park with my friends after supper, avoiding homework. I had no idea that what would become an international movement was born on that very day.

Since then, Earth Day has grown to be a global phenomenon.

From its fringe beginnings, the event has expanded every year; by 1990 it had moved beyond the US borders to become an international event. By 2010, despite new conflict and those in opposition to the idea of climate change, “Earth Day prevailed and Earth Day Network. . . launched the world’s largest environmental service project—A Billion Acts of Green®–introduced a global tree planting initiative that has since grown into The Canopy Project, and engaged 22,000 partners in 192 countries in observing Earth Day.” [source].

In fact, according to the official Earth Day website, these days Earth Day is “the largest secular observance in the world, celebrated by more than a billion people every year, and a day of action that changes human behavior and provokes policy changes.” [source]

So of course I was more than delighted when one of my favorite companies, NuNaturals, asked if I’d participate in their Earth Day celebrations–so I decided to contribute these Grain-Free Ginger Blondies to celebrate! 

NuNaturals Ginger Syrup Blondies on rickiheller.com

Grain-Free Ginger Blondies

6 Tbsp (90 ml) natural smooth cashew butter
3 Tbsp (45 ml) raw or toasted coconut butter, melted (not coconut oil)
3 Tbsp (45 ml) chickpea flour, sifted
1/8-1/4 tsp (.5-1 ml) fine sea salt (to taste)
2 Tbsp (30ml)  whole psyllium husks
3 Tbsp (45 ml) NuNaturals Ginger Syrup
1/4 tsp (1 ml) NuNaturals vanilla stevia liquid (optional)
4 tsp (1 Tbsp plus 1 tsp) pure vanilla extract
3 Tbsp unsweetened almond, cashew or other alternative milk of choice
1/2 tsp baking powder
1/4 cup sugar-free chocolate chips (I used Lilys brand)

Preheat oven to 325F. Line an 8- or 9-inch loaf pan with parchment, or spray with nonstick spray.

In a medium bowl, combine the cashew butter and coconut butter until smooth. Stir in the chickpea flour, salt and psyllium husks and blend well.

Add the Ginger Syrup, optional vanilla stevia, vanilla extract, milk and baking powder and stir to form a soft dough. Finally, stir in the chocolate chips. Spread the dough evenly in the pan and bake for 18-23 minutes, until beginning to brown on the edges and just firm on top. Allow to cool completely before serving (the blondies will firm up as they cool). Makes 6-8 large blondies.

Variation: For individual blondies, divide the dough evenly among muffin tins or mini muffin tins; bake only 15-18 minutes.

Suitable for: ACD Stage 2  and beyond; refined sugar-free, gluten-free, grain-free, dairy-free, egg free, soy-free,yeast-free, vegan, low glycemic.

    I’m yet to try any of their products, but the vanilla liquid stevia is number one on my wishlist! I’ve been using the green powdered stevia, would love to try the liquid to see the difference! 🙂

    Having just found out via an IgG blood test that I’m intolerant to a number of things including cane sugar… these products look fabulous and the recipe…. yum yum yum!

    I love their cocoa powder the most and so excited to see they have ginger syrup. I need to jump on that discount and try it. I tried their Green Banana Flour and was pleasantly surprised that I liked it too. I love that they are planting all those trees for Earth Day this year–and awesome company!
