BASIC NUT OR SEED MILK RECIPE
Be sure to allot enough time to soak the nuts or seeds before you blend them–they really do need to be softened up this way in order to make delicious milk!
To prepare the nuts:
1 to 1-1/2 cups (240 to 360 ml) raw nuts or seeds of choice, depending on how creamy you want the milk
Soaking water (see instructions)
To make the milk:
4 cups (1 L) filtered water
Pinch of fine sea salt (optional)
Stevia or maple syrup to taste (optional)
Place the nuts in a large bowl and cover with filtered water until the nuts are submerged. Allow the nuts to soak at room temperature for 4-6 hours, until they begin to look a bit more plump and softened (almonds may take up to 8-10 hours).
Drain the nuts and place in the jug of a high-powered blender with the 4 cups (1 L) filtered water, then blend for a full minute, until smooth and creamy.
Strain the milk using a cheesecloth or nut milk bag, squeezing out as much of the liquid as possible. Add the salt or stevia to taste, if using. Store the milk in a clean glass jar in the refrigerator for up to 3 days. Makes 3 cups.
